Ten years ago this city gave you chains, and now it has roasteries, cuppings, competitions and people who ask which farm their coffee came from. Specialty coffee scores 80 or above out of 100 on the Specialty Coffee Association's scale, meaning beans traceable to a named farm, sorted properly and roasted to show the origin instead of hiding it. "Speciality" is British, "specialty" is American, same thing. Check the roast date rather than the best-before date, match the roast to your brewer, medium for espresso and lighter for pour over, then pick an origin: Ethiopians lean floral, Colombians caramel-sweet, Brazilians nutty.
