KNOW YOUR LOT
Every number — and every note — behind this coffee, published. Tap a metric to see what it means and why it matters.
Where this coffee comes from
Colombia is one of the world’s most celebrated coffee origins, renowned for its rich coffee-growing heritage and remarkable diversity across its many producing regions.
Where within the origin it was grown
One of Colombia’s most established coffee-growing regions, Antioquia is defined by its mountainous terrain and long-standing coffee culture. The region has played a major role in shaping Colombia’s identity as a world-renowned coffee origin.
Who grew or produced this coffee
This coffee is produced by multiple smallholder farmers, with each contributing small lots that come together to form the final coffee. This model reflects the collaborative nature of many coffee-growing communities.
The coffee variety grown / What this blend is made from
Castillo is a Colombian coffee variety developed for resilience while maintaining strong cup quality, making it widely grown across the country and an important part of modern Colombian coffee production.
How high this coffee was grown
Grown at 1,800 metres above sea level, the cooler conditions at this elevation slow coffee cherry development, allowing more time for complexity and character to develop in the cup.
How the coffee was processed after harvest
Swiss Water is a chemical-free decaffeination process that uses water, temperature, and time to remove caffeine from green coffee. It is designed to preserve as much of the coffee’s original character and flavour as possible.
How far we developed the roast
A medium-dark roast develops deeper sweetness, fuller body, and richer caramelised flavours while retaining some of the coffee’s inherent character. It’s roasted further than a medium profile without reaching the intense roastiness of a traditional dark roast.
How we think this coffee shines best
Best extracted as espresso, where its sweetness, body, and intensity can shine through in a concentrated cup. Its fuller profile also makes it an excellent choice for milk-based drinks.
