How the coffee was processed after harvest

The coffee is fermented in a sealed, oxygen-restricted environment before being dried with part of its fruit mucilage still intact. This combination can intensify sweetness and fruit character while adding greater complexity to the cup.

A SMALL LOT, SET APART

Within our wider Guji Hambella natural harvest, a small volume of coffee was set apart to create something more distinctive. Produced in limited quantities, this anaerobic lot reveals a more intense and unconventional side of an origin celebrated for its elegant floral character.

What captured our attention was the balance it maintained. The cup opens with the fragrant quality of hibiscus tea, followed by vivid grapefruit acidity and lingering florals. Despite its expressive nature, it remains clear and refined rather than becoming dominated by fermentation.

It is a rare interpretation of Hambella: recognisably Ethiopian in its delicacy and aromatics, yet elevated through greater intensity, complexity and a livelier expression in the cup.
