Quindío lies at the heart of Colombia’s Coffee Triangle, known for its volcanic soils, lush mountains, and ideal growing conditions. Its coffees are celebrated for their balanced sweetness, smooth body, and vibrant flavour.
Who grew or produced this coffee
Viviana Martínez is a fourth-generation coffee producer behind Finca El Edén in Quindío, Colombia, known for combining her family’s coffee-growing heritage with innovative fermentation techniques to create distinctive and expressive specialty coffees.

Pink Bourbon is a distinctive Colombian variety, valued for producing vibrant, fruit-forward coffees with pronounced sweetness, juicy acidity, and delicate floral notes.
How high this coffee was grown
Grown at 1,560 metres above sea level, the cooler conditions at this elevation slow coffee cherry development, allowing more time for complexity and character to develop in the cup.
How the coffee was processed after harvest
Following a strict selection process and a dual-phase 48-hour cherry pre-fermentation, the coffee is depulped to retain its sugar-rich honey mucilage. The beans are then sealed in anaerobic tanks for 5 days, submerged in an active coconut mosto culture that deeply infuses the core of the bean with rich, tropical complexity. After 10 days of precision mechanical drying and a 5-day stabilization period
How far we developed the roast
A light roast preserves more of the coffee’s inherent character, allowing its natural sweetness, acidity, and complexity to remain expressive. It’s designed to showcase the qualities developed at origin rather than flavours created through heavier roasting.

This coffee is best enjoyed as a filter brew, allowing its flavours, aroma, and complexity to unfold with greater clarity in the cup. Methods such as V60, Chemex, or other pour-over brewers are ideal for highlighting its character.
