One of the defining characteristics of Estrella Azul coffee is its distinctive processing method known as Pulp Natural. This method combines elements of both washed and natural processing, resulting in a cup of coffee that boasts the best of both worlds. Upon harvesting, the ripe cherries are carefully selected and pulped to remove the outer skin, exposing the sweet, flavorful mucilage beneath. Rather than fully washing the beans, they are left to dry with some of the sticky mucilage still intact, imparting a unique sweetness and complexity to the final cup.
